Shrimp & Ham Bowls
Sound the sirens, alert alert - Perfect 10 according to the husband entering the house. You know what, totally agree with him. My man likes to take the leftovers out from under my nose, I did not allow this to happen with this recipe. Sometimes you just have to put the smack down ladies (sorry gents)!
INGREDIENTS
4 tbs Butter
2 tbs Flour
1/2 tsp oregano
2 cups white onion, diced
3 cloves of garlic, chopped
2 cups ham, cubed and cooked
2 cups diced tomatoes
1 cup uncooked rice
2-3 cups of chicken broth
2 cups shrimp, you can use fresh or frozen (thawed)
DIRECTIONS
In a large saucepan, melt butter over low heat. Stir in flour until smooth. Stir in onions, garlic, and ham; cook and stir until onion is soft.
Stir in tomatoes, and cook for 5 minutes. Mix in oregano, rice, and broth. Cover, and simmer until just a little liquid remains.
Add shrimp and stir to evenly distribute. Cook for about 8 minutes or until rice and shrimp are both cooked.
Open drawer, grab spoon, run to meal, fight off husband, wife, kid, parakeets...etc....etc....
Whoever leaves the house first in the morning gets first dibs on leftovers for lunch! The shrimp and ham in this recipe sounds delicious. Thanks!
ReplyDeleteI always hide my favorite leftovers...and if I'm lucky my husband doesn't find them (he wakes up much earlier than I do). I can certainly see why this dish was so popular...it looks amazing!
