Chimichurri Sauce





Today I drove half way to work without my Laptop, I drive a total of 30 miles to work. As you can imagine this led to a very frustrating morning! I got this sickening feeling in my gut when I realized it, called co-workers and made a U-Turn.



After following what seemed like 79 cars who also for some reason needed to drive in front of me ALL the way to my house I made it home. I launched into the house, careful to not wake the munchkin and found my ball & chain.







As I made my way for a 2ND time to work I ventured out to try a new freeway, great choice…NOT! Traffic, Traffic, and more traffic – a wrong exit here, wrong turn there….I made it, finally.



Phew. Now on to the sauce..Full Flavored & Gorgeous, a must try. I will even admit to dredging my grilled cheese in it last night, so sue me.

INGREDIENTS


1 cup firmly packed fresh flat-leaf parsley, remove stems
3 garlic cloves
2 Tbs fresh oregano leaves
1/2 cup olive oil
2 Tbs white wine vinegar
1 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes







DIRECTIONS

Finely mine the parsley, fresh oregano, and garlic - Place in a small bowl.


Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Serve immediately or refrigerate. If chilled, return to room temperature before serving. Chimichurri can keep for several days, aka dip anything and everything in it for a few.

We enjoyed this delightful sauce over two bomb filets...oh the memories.

  1. I love chimichurri sauce on churrasco. It's been a while since we grilled. Now that the weather is nicer, it's grilling time :). I'm going to have to put churrasco on the menu for next week. I could definitely go for some of your chimichurri. Yum. Yum. Yum.

  4. The first time I tried chimichurri was on my honeymoon in Holbox, Mexico. I've been obsessed with it ever since.

  5. The sauce looks like it would be great on just about anything. I gave up my 40 minute commute years ago- work for me is only 10 minutes away, and that's the way I like it!

    Don't you just hate those days? It always seems when you are in a rush, you get a little old man with a hat driving way, way below the speed limit in front of you....lol Glad you made it finally:)

  12. Honestly, I have always loved chimichurri sauce but have never known just quite what it was! Now that I know, I will definitely be trying it next time I have leftover parsley (which is more often than not). I bet it is delicious over a nice grilled steak.     Love the Moby Dick quote. Love the chimchurri sauce I have for ages said that I was going to make a chimchurri sauce. I suddenly feel inspired.

  20. I left my laptop at the Denver airport yesterday! Thankfully some kind soul turned it into lost and found...and it is being shipped my way. So I understand how you feel about forgetting! This sauce looks so delicious. Such a bright and flavorful addition to so many food items!

  35. I've never had this stuff! But now that you mention dipping grilled cheese in it, I may have to do it . We have your grilled cheese with basil and honey on the menu for this weekend so I might have to change it up to use this dippin sauce.

  39. I love chimichurri sauce with steak and just about anything else! I use half parsley and half cilantro. My family just calls it green stuff! Can't wait to see your light box results--I am thinking about buying/making one, as there's little natural light up here at this time of year.
