Pumpkin Casserole






Man do I remember Disney Movies. A few weeks ago I had the honor of hosting a girls night at my home that included the following :


1. 3 Moms
2. 3 Toddlers, 1 Baby
3. Puppy Chow and a Cheese ball filled with bacon..drool
4. The Little Mermaid



You know what? Us mom’s remembered every last word to every last song in that flick. From Ariel singing about her items she collected from humans to Sebastian leading a full on ocean orchestra – LOVE.



As far as animation goes times have changed…and this is where I ease you into the next recipe. There is no harm in testing out some pre-holiday recipes in order to toss Thanksgiving up, I realized that I am holding onto some dishes that it seems the Holidays HAVE to HAVE and I don’t even love them. Now why on earth am I doing that? I most certainly do not want to disappoint guests…However this little casserole is knocking on sweet potatoes door…and well..he’s ready to fight.







INGREDIENTS

• 2 cups pumpkin puree
• 1 cup heavy whipping cream
• 1 cup white sugar
• 1/2 cup all purpose flour
• ½ tsp baking powder
• ¼ tsp salt
• 1/8 tsp salt
• 2 eggs
• 1 teaspoon vanilla extract
• 1/2 cup butter
• ¼ tsp cinnamon
• ¼ tsp pumpkin pie spice







DIRECTIONS


First you will want to preheat your oven to 350 degrees F, Now let’s get our mixing on.









OMG , I also just saw Lady & the Tramp a couple of days ago…my how times have changed!!
Combine the pumpkin, heavy cream, sugar, flour, baking powder, baking soda, salt, eggs, vanilla, melted butter and ground cinnamon to taste. Spoon into a casserole dish.







Bake at 350 degrees for 1 hour. Remove from the oven and let this dish cool for at least 30 minutes, it will really set up nice so don’t get nervous.



VOILA – Sweet Potatoes, meet your match…I also recommend picking up any old Disney favorite and making a night of it.

  2. The Little Mermaid was the first movie I saw in the theater...my mom had to take me out early because I got too scared! This pumpkin casserole looks creamy and full of fall spices. Perfect for a cool October day. Thanks for sharing!

  3. I don't like sweet potato casserole, so this sounds 100% better! It's pumpkin pie(almost) without the crust:) BTW, those brownies from your last post look soooooo good!

  4. I'm not sure anything could ever replace my beloved sweet potatoes! But not everyone in my family feels the same way, so maybe I should work this into my rotation.

  10. The little mermaid was a classic, I loved watching it over and over again with my son! And those were some of the best Disney trips we too, I do miss those days....sigh.....your pumpkin casserole looks delicious!! I'm sure everyone loved it!

    You are so on point about Thanksgiving "staples". My mom used to make this tuna ring (it's every bit as awful as it sounds) every year when I was growing up and eventually, my sisters and I had to hold an intervention. She let that recipe go, thankfully.

    I'm not a fan of sweet potatoes so thank you for sharing a back up!

  13. I am thrilled with all the pumpkin recipes out there! I swear, I could make a new meal every day for a month with pumpkin and be satisfied! Hmmm... Good idea for a blog. Maybe next year!

  19. My daughters favorite movie used to be the little mermaid and even at 3 years old she could sing all the songs and memorize lines. She must have watched that movie hundreds of times LOL

    The pumpkin casserole looks great and is definitely something I will have to try out. I don't care for the traditional sweet potato casserole with the marshmallows but this looks way more sophisticated :o)

  24. I think my favourtie Disney is Robin Hood, or maybe The Jungle Book, or else The Lady and the Tramp, very hard decision!!!!

    Very difficult to source tinned pumpkin puree here .... wonder if it works as well with fresh pumpkin pureed?

  28. Mmmm, this does sound good. My veges don't have to fight cos we don't actually have thanksgiving here, so I can make them both on different days :) win-win! And my girls are loving TLM at the moment, the 3 year old goes everywhere singing the ah-ah-aaaahhh, ah-ah-ahhhhhh that Ariel does, too precious!

  30. Either or Kristen, I think some people will think crustless pie (dessert) but some will love this contrasting sweetness as a sidedish on their thanksgiving plate.
