Avocado & Lime Sauce





I have to report that due to the time change, general location, and the suns new freakish position in accordance with my window I am now the proud owner of a soon to be here photo box…Can’t wait till it arrives...and I figure it out (non instruction reader in da'house).


Speaking of this Photo box, I am sitting here envisioning stuffing Indigo in there for good lighting! LOL, not sure if she would cooperate.


More speaking, my husband helped me whip this up for a snazzy dinner last night and we we’re quite happy with the results. This sauce would be mighty good on no less than 3,942.1 things. No, really – we counted!






Delightfully borrowed from the one and only FOR THE LOVE OF COOKING


INGREDIENTS


1 ripe avocado
1/3 cup fresh cilantro
3 cloves of garlic
Sea Salt & Pepper for taste
1-2 tbs of Olive Oil
½ tbs red wine vinegar
Juice from 2 limes







DIRECTIONS

Mix all of your ingredients in a food processor, or like me….I do not have one. I simply chopped it all up and mashed with a potato masher, then transferred to my blender.






Now, time to put hubby to work.. We served this great sauce with sliced sirloin and a side dish of black beans, chopped roma tomatoes, and cheddar cheese.

  1. SO excited to see the results of your photo box! I got a new lens a few months ago to help photograph when I can't use natural light...and I've had mixed results.

  14. aaagh! Im in the PacnW and the constant rain+dark nights has hubs building me a light box too!!! Mmm your sauce looks amazing, and I think that I could come up with AT LEAST 4,000 uses!

  17. This sounds so tasty! And I actually love the darkness in the photos...it's fun- 'specially w/ your cool table and the black flower...love it! But I am jealous that you're getting a light box. I have to put the hubs to work making me one....

  20. C Family - A Photo box is a great way to *light* your pics. It is an enclosed white box with side lighting to really enhance pictures with quality lighting. You place and object inside of it and it gives great lighting even if pitch black surrounds it.

  22. Your light box will no doubt help you a great deal, Jen! I'd explain to you what I do for good lighting at night, but it might take a while - Good news is that it's CHEAP and it works! This lime sauce, however, still looks absolutely delicious! Thanks for sharing.

    Did I tell you I made the Chimichurri Sauce and served it over london broil? We loved it. The kids mixed it into their mash potatoes & dipped focaccia into it! They're pretty smart aren't they?
