Sweet Potato Crostata




Man, I’m pooped. Kid’s internal clocks are really in tune with the time change…it moves them to wake up at all odd hours! I have been up since 5am and nap time was a big fat failure.


Let me start off with saying I have no idea if me filling this crostata with sweet potato makes it not a crostata…anyone know? All my googling has proved fruitless, just like this crostata..LOL



INGREDIENTS FOR CRUST

½ cup fine sugar, you can use a blender/processor
1 ¾ cup flour
1/8 tsp salt
1 large egg + 1 yolk
1 tsp vanilla
1 stick of butter, cubed







FOR THE FILLING

(15oz) can Sweet Potato Puree
¾ cup sugar
½ tsp nutmeg
¼ tsp ginger
1 tsp vanilla extract
1 cup evaporated milk
2 eggs, beaten





DIRECTIONS



Whisk together sugar, flour and salt in a bowl. Rub or cut the butter into the flour until the mixture has the consistency of coarse crumbs. I use my potato masher for this.







Make a well in the center of the mounded flour and butter mixture and pour the beaten eggs & vanilla into it







Use a fork to incorporate the liquid into the solid ingredients, and then use your fingertips.






Knead lightly just until the dough comes together into a ball. Shape the dough into a flat disk and wrap in plastic wrap. Place the dough in the refrigerator and chill for at least two hours.


Next comes the sweet potato part…this is fairly easy. Mix all the ingredients together. D O N E.







Assembling this beauty is next. You will want to use a tart pan that has been buttered and floured, roll out your dough on some parchment that has been lightly floured. Flip parchment over on top of tart pan, then roll dough off.







Pinch off the edges with your rolling pin and reserve extra pieces for cookie shapes on top. Pierce the bottom with a fork.






Pre-heat your oven to 375 for this crostata…it will bake between 40-55 minutes.
While baking, cut out various shapes to place on crostata, these can be baked at the same time or after.







Crostata is cooked once a toothpick comes out clean, remove from oven and allow it to set up properly. Once set up add the crostata crust cookies.







Slice this bad boy up and please enjoy, actually – please someone come to my house and take this hip enhancer away!

    PS Holden has been the same way all day!!! Up at weird hours... wouldn't nap... and is fighting going to bed tonight too. Funny how much more in tune with the universe kids seem to be.

    Time change does take a bit of getting used too-no doubt. I awoke at 5:00 a,m. and was wide awake. I was ready for a nap at 2:00 and ready for bed at midnight (ugh).

  38. My Italian Nonna called anything with a dough baked crust...a crostata. I never would have dared question what she knew to be logical.

    As for all the great ingredients that went in this dessert...as long as its tasty...you can call it anything you like ;o)

  39. I am so with you. I just put my kids in bed as they were cranky. They were up at 5:30 am. They usually dont get up until seven. If only I could sleep... Ah the silly dreams of parents.

  43. Beautiful. I have never seen sweet potato puree although, it is not difficult to make it. I do have a food processor and I must admit, I use it a few times a week, so it has become a necessity.

    I do want to make this. Thanks for sharing it.
