Roasted Brussels & White Bean Succotash





You might not know this but let me tell you, I dig on horror movies.


I have no idea why I like to inflict that pain on myself, but I do.


I don’t know one person who will happily watch a flick with me; it is all done by force and manipulation if it happens. You know, I’ll trade you one bad 80’s comedy for one horror movie this weekend = DEAL!


Being that the hubster was busy at work this weekend…I had On Demand all to myself…

NOT GOOD

I decided to watch The Fourth Kind and promptly had the scariest alien dream that night.


Needless to say, this morning has been filled with deciding what I need to purchase in order for our family to survive because of the imminent arrival of aliens.


I suggest you do the same.


Then after that I suggest that you make this because it rocks!







INGREDIENTS

2lbs shredded Brussels sprouts, roasted to the consistency you prefer with Olive Oil
1 can of white beans, drained & rinsed
¾ cup of frozen corn
Lemon juice
Asiago or Parmesan Cheese
Fresh Parsley, to your liking







DIRECTIONS

In a large pan combine your corn & white beans until warmed (medium heat). Add in your Brussels sprouts and a generous dose of lemon juice. Sauté for 6-8 minutes, then toss in the cheese and fresh parsley.


Serve & Enjoy. But don’t fall asleep…and if you do, make sure you have all the proper supplies for that alien attack







PS. the smell of roasted Brussels sprouts could also detour aliens from your house.

PS X 2. Please forgive me for posting Brussels sprouts 2 times in a row...I am slightly addicted and there were leftovers.

  6. haha! you're braver then me, the older i get, the more scared i get. the ring was the last scary movie i saw and i'm still traumatized, lol!

    this looks great though, i love the brussels sprouts and beans, it would make a lovely lunch!

  7. When I was a little girl, my mom would boil brussel sprouts and I had to sit at the table till I ate all my veggies.... I usually put it off too long and they got cold ~ and even less appetizing. I swore I would NEVER touch them when I grew up. And I didn't... until a couple of months ago, at a friend's home she served them roasted. My kids knew my story and watched to see what I would do. I tried them and just like Dr. Seuss's book Sam I AM... I liked them! So I've been on the lookout for new ways to make them! This sounds great. How did you shred them??

  10. These look really good. Best veggie ever. And may I say horror movies are amazing. The fourth kind gave me nightmares too. I'm counting down to Scream 4. But if you want to see something ridiculous and disgusting, the human centipede. You won't eat for a week though.

  11. OK, I do not like horror movies! I used to...but no more! I don't know why but I don't! Thrillers = yes. Horror = no.

  13. I am totally not a fan of horror movies. I can't watch them at all.
    On the other hand, I love brussels sprouts and so do my kids. This looks like a great way to enjoy them.

  14. hah! I wonder if they would deter zombies as well?! I am on a brussel sprout kick as well since the hubs bosses gave him two ginormous jack and the bean stalks!!! (THEY ARE HUGE!)

  19. The Fourth Kind creeped me out! Especially because they say it was based on a true story. I am for sure not moving to Alaska... Lol. This plate looks good annnd healthy. I'll have to give this a go! =) I'll be following.

  27. I would gladly watch a horror flick with you! But you'd probably have bruise marks on your arms from all the clutching involved... oh, and your ears will be ringing too because I like to scream - that's the best part!

    So glad you're posting 2 sprouts recipes in a row. I'm looking for other ways to cook them beyond boiling or steaming!

  29. Yeah, so not a big fan of scary movies. They do just that, scare me. I do love some brussel sprouts, but I agree with you on the smell. The smell scares the hubby into wanting them cooked in the house!

  33. Ok. I don't do scary movies. I used to, but I'm a gigantic wuss now. I'd rather watch a Lifetime movie any day of the week. My husband made me watch The Fourth Kind and I have been freaked out for WEEKS! Never going to Alaska. Ever.

    Anyway, the dish looks awesome! I'm a brussels sprout lover so it's going on my must try list. Thanks!

  35. This Succotash certainly reminds me of Thanksgiving, very traditional dish! I like it a lot and tend to force feed my siblings with it! I get horror mail from one or two but thank me later after they have educated their palate. Thanks for making this great dish!

  39. I've just made it. And love it. as a plus ingredients, pour some tablsespoon of mixed seeds, like : linseed, sunflower seeds, sesame. Great & light food. thanks again.
