Spaghetti with a Tomato & Anchovy Sauce
Oh Oh Oh, I’m tired. Date night was fabulous but let’s face it…Parents don’t get to sleep in! So right about now I feel like whining to the world.
“HEY WORLD!!!! Can a girl get a nap around here?” *said with an Italian accent*
I have news for you, the world has no nap in store for me. I have quite the list of things to accomplish.
Jennifer's To Do List :
1. Grocery shopping
2. Teach Indigo how to tie her shoes
3. Watch America’s Funniest Home Videos
4. Drink a glass of wine
5. Pick up goldfish that are littering the living room carpet
6. Let the cat out…Let the cat in..Let the cat out….Let the cat in…
7. Drink a glass of wine, this is not a typo.
Told you it was a FULL day.
Ingredients:
Delightfully borrowed from Rachel Ray
Jennifer's slightly altered {Printable Recipe}
• 1 pound thin spaghetti
• 1 medium red onion, coarsely chopped
• 1 red chile pepper, fresno, chopped
• 2 cloves garlic, grated
• 1/2 cup flat-leaf parsley
• 2 tablespoons fresh thyme leaves
• 2 bay leaves
• 1 lemon, for juice
• 1/4 cup EVOO (extra-virgin olive oil)
• 6 anchovy fillets
• One 28-ounce can whole, peeled tomatoes
Directions:
Bring a pot of water to a boil, salt it, add the pasta and cook until al dente. Drain the pasta. Coat pasta with a little bit of Olive Oil.
Meanwhile, using a food processor, puree the onion, chile, garlic, parsley, thyme, bay leaves and lemon juice.
In a large saucepan, heat the EVOO, 4 turns of the pan, and the anchovies over medium-high heat until the anchovies melt. Add the onion-chile paste and stir for 3 to 4 minutes.
Add the tomatoes with juice, breaking up the tomatoes with a spoon. Cook the sauce until thickened, about 20 minutes. Toss the spaghetti with the sauce.
Now eat this up and then go take a nice long nap for me, just don’t tell me about because I would then become insanely jealous and ….yawn, snore…*eyes closing*

Love anchovies in tomato sauce. My kind of dish. Yum! Good luck with the list :)
Anchovies contribute SUCH wonderful flavor to sauces. It's a shame so many people are squeemish about them. I am glad to see you are not one of them, and glad you have wine x 2 on your list ;)

My son and I really love anchovies and I think we would both really love this. I don;t think they would be overpowering, just right. I wonder how the sauce would be tossed with spaghetti squash instead of pasta?
so tasty n fullfilling...can t take my eyes off your gorgeous clicks..
Tasty Appetite
Ok, that's why I couldn't get a nap in this weekend either... wine and cats!!! :)
The pasta looks lovely...I'd kill for a plate right now!!
I've got to add some 'chovies to my sauces (when I'm dining alone, since hubby hates them, sigh). You sure had a full day! WOWZA! Hope you get that well-deserved nap!

I can imagine how tiring it must be to do all of these things and keep a blog going! You deserve the wine :) (plus some chocolate, too!)
I'm with ya! With three kids, there is always someone getting up early when I want to sleep in. Great spaghetti recipe, though.
Sounds like you need a dog to eat of the fishy crackers! I love anchovies in pasta dishes. They give such a rich flavor. Mmmm!
Looks absolutely delicious and would be perfect with a nice big glass of wine or two!
i have to admit.... anchovies freak me out, but i like the flavor they give. i just don't think i'd be able to actually add it to the recipe. YUCK.

Oooh this looks yummy! I'm using anchovies more and more lately. Just put them on some pizza last night, and was amazed at how much good flavor they add! Hope you accomplish your list!
This looks like a good one for me to help use up the anchovy paste I have in the fridge.
I love spaghetti since I was a child. My mom always cooks me, my brothers and my sister whenever it's our birthday or other special occasions that needs celebrating. Thanks for sharing this recipe. Now I can cook for my mom. I'll definitely make this before I get my ISO 22000 Training.
