Oatmeal Cookies with Strawberries






Did I ever tell you guys that I am lazy but at the same time have super freaky high anxiety? Basically this means that I want to sit on the couch while my house cleans itself because I can’t deal with a messy house or crazy food smooshing in your carpet toddlers.


My little human stomped Strawberries into the carpet. Anxiety meter on high alert *beeeeeep*







I still took her punk butt to Chuck E. Cheese's, and won her a plastic straw - that plastic Straw set me back like 10 bucks but was totally worth it. I also might have taken some tokens from Indy because well I hadn’t played that throw the ball game in quite some and when she launched her ball 6 rows over I sorta felt like I should take over. *beeeeeeeeeeeeeeeeeeeeeep*


Right now she keeps putting her freakin feet on me and this laptop *beeeeeeeeeeeeeeeeeeep*

INGREDIENTS (makes 16)
{Printable Recipe}


½ cup + 2tbs butter, softened
¼ cup brown sugar
¼ cup granulated sugar
1 egg, beaten
1 tsp vanilla extract
¾ cup flour
½ tsp baking soda
½ tsp salt
½ tsp cinnamon
1 ½ cups quick cooking oatmeal
¾ cup, diced strawberries









DIRECTIONS


Pre-Heat your oven to 350.

Line a baking sheet with parchment paper.


In a large bowl cream together your butter and both sugars. Add in the egg and the Vanilla Extract. Next stir in the quick cooking oatmeal.









Now add in the strawberries, be light handed so you don’t injure those sweet berries. Roll dough into large tablespoon sized balls. These cookies do not spread very far, so you can put a decent amount on your pan.









Bake for 12-15 minutes, then remove and place on a wire rack to cool. As with any dessert with fresh berries, the cookies will become more moist over time and are best enjoyed as soon as possible.

I made strawberry shortcake cookies last week and loved using in strawberries in cookies! I picked up more strawberries this weekend because they were on sale at WholeFoods. Maybe this is what I should make with them next?

Skee ball is the best thing at Chuck E Cheese for sure! These look so delicious. I never think to actually stick strawberries in anything baked. Duh! I will do so now though. :)

I so wanna live in a house that cleans itself. I've been cleaning all day today, throw things away and the house seems to somehow became messier. The cookies look amazing. Love the strawberries in them.

I can relate to this post because I'm the same way. I love the idea of adding strawberries to an oatmeal cookie. They look gorgeous!

P.S. If it makes you feel any better, my daughter smashed blueberries onto my antique piano before. It wasn't pretty.
