Avocado & Cilantro Lime Sauce




I felt such confusion this weekend. On Saturday I walked into my child’s room because it was 7:30am, Indigo never sleeps this late. I walked in and she took one look at me, then said “Mommy I want to rest some more.” This is where my very profound confusion set in.

I have never in all of my 4 1/2 years with her ever been told that she wants to go back to sleep. You can imagine that delight did not set in, I was confused, I was panicked… Many things were running through my head at this point.

1. How sick must my child be to want to sleep 14 hours?
2. Where is that damn thermometer, and why can’t I keep it in one spot?
3. Why is Nancy Grace so obnoxious?



The first 2 questions have answers don’t bother with that third question. My poor little Indigo was subdued with a high fever of 104. The sad thing is…it was wonderful for her mommy. They sure do grow up fast, because I haven’t taken care of her like that for what seems like decades.



I cuddled her, stroked her sweet head, dosed her up with kid medicines, and watched 17 Barbie Movies in a row and Chipwrecked…twice. I brought her things like toast, grapes, and ice water. Indigo instead chose 2 pieces of bacon, a GoGurt, and 5 sippy's of milk….yes it was against my better judgement to feed her such things not knowing the state of her stomach…however I played my odds and won.

Speaking of won, these tacos are a wonner…umm, I mean a winner! The sauce is as lovely as Nancy Grace, just kidding this sauce kicks that woman’s butt.



Avocado & Cilantro Lime Sauce

1 bunch of Green Onions
1 cup Cilantro
1 Large Avocado, diced
2 Garlic Cloves
¼ cup Rice Vinegar
¼ cup Lime Juice
Salt & Pepper for taste

*Place the pit of the avocado in your finished sauce, it keeps longer that way.

Place all of it in your food processor and blend well, add salt and pepper to your liking. We used these on our Char Siu tacos. Everything served in a piping hot corn tortilla. Indigo just had bacon, a very pleasing alternative if you ask me.

Glasses and Candied Pecans



Apparently I have been driving around blind, and I didn't even notice until the last few days.  Basically I felt like someone was pumping air into my head (no jokes please), and that it might explode at any moment.  I took a quick trip to the doctor and she let me know I realllllly needed to be checked out for glasses, and I did immediately.



After the new glasses were purchased I hit the rode, and my world has changed!  I had no idea cars didn't have 16 tail lights.... The trees now have individual little leaves and I don't have to squint at the TV to see which Real Housewives marathon I'm watching.

I also noticed the the floor drastically needs mopped and there's dust all over the baseboards.  Something tells me these glasses are going to make me clean tons this weekend.  Hmmmm...maybe my husband needs glasses...



I also made the realization that I am a recipe repeater at the moment.  I accept this.  I long to be the blogger that creates rather then repeats and passes on but that's just not me.  I'm simply a super busy mom who loves her kids, hubby, TV, wine, and random crap she cooks borrowed from other peoples wonderful imaginations.



Everyone has a role to play and I am happy to accept mine!  I am the queen of bad TV, sauvignon blanc, over medium eggs for dinner, messy cars, pop music, and putting way too much butter on toast.

This week I managed to candy some pecans and bake some chocolate chip cookie bars with them.  In all honesty I preferred to just eat the candied pecans, super super yummy.
