Shrimp Fajita's with a Tangy Cilantro Lime Sauce

I am kicking it to you old school today with some old facts about my life, why not I share all of my little Indigo’s stories..might as well embarrass myself too!

I am from Florida, my daily outfits consisted of booty shorts and tank tops. I have been 6ft tall since the day I was born (sorry mom). I got sent home all the time for my skimpy shorts! Ha Yes, in Florida they have a short shorts rule, must reach to your finger tips.

I also danced to booty music “whoomp there it is, WHOOMP there it is!”

*shakes booty*

I was on the school dance team, this involved lots of sparkles and one time I had to dance on a toilet that was 6ft high.... to the song “Push it”.

I lived on Ramen and Grilled Cheese sandwiches, and I LOVED it.

I was obsessed with being popular, I was obsessed with having bigger tata’s, I was obsessed with anything but school.

INGREDIENTS Marinade
Delightfully borrowed from Gina, albeit cooked a lil differently
{Full Printable Recipe}

1 lb Shrimp, shelled and deveined
2 tbs Olive Oil
1 ½ cups cilantro
3 cloves garlic
Juice of 1 lime
Salt & Pepper

DIRECTIONS

In your food processor blend together your Olive Oil, Cilantro, garlic, and lime juice. Pulse until well blended.

Place your shelled and deveined shrimp into a bowl and coat with salt & Pepper and your marinade. Refrigerate for 1-2 hours.

Once marinated, we are ready to pan fry. Heat up a pan over a medium high heat, place the shrimp in a single layer in the pan. Each side will take about 3 minutes. You should get a nice little product if I do say so myself...and I do.

Set your shrimp aside whilst we prepare the rest..yes you can sample 1 or two.

INGREDIENTS Tangy Cilantro Lime Sauce

1 ½ cups plain greek yogurt
2 cloves garlic
¾ cup cilantro
Lime juice
Cayenne pepper (to taste)
Salt (to taste)

DIRECTIONS

Place all ingredients into your food processor and blend, add cayenne pepper to your spice love level.

And what is the last step? Glad you asked…here is what you will need

1 Onion, sliced
1 cup Roasted Red Peppers, diced
Whole Wheat Tortillas

Pan fry the onions and peppers, then layer into your tortilla with all the rest.

Obviously you can assemble with any ingredients you have on hand! Feel free to stuff these babies any way you like because you totally have my permission.

Tortilla + pan fried onions & peppers + Shrimp + sauce = World Peace

Hmmm, your high school experience sounds very similar to mine :)
Can you believe I was actually wearing booty shorts IN a Dr Dre music video?! Crazy, right?
This recipe is perfect for Cinco de Mayo!

In my next life, I 'm going to be 6-ft tall. I am so envious. I was born and raised in MIami. I am Florida girl too. Should I mention that in high school, we could not even wear shorts (sigh). We were sent home.

Your shrimp tacos look divine. Nice!

I've recently discovered I actually like shrimp so these look amazing. I have to try them! Your high school stories made me giggle. I remember those days. Stupid short shorts rule.

Too funny...and now I will be singing WOOHMP THERE IT IS...all day long thanks.

I am having a little "happy hour" thing here tomorrow night and I might make these but in tea sandwich form??? (For the ROYALS) I have all the ingredients! XO

You are too funny! I too wore a lot of shiny outfits on my high school dance team, but you have me beat with dancing on a toilet. Your creative director was one creative gal.

Also, this recipe sounds phenomenal--I have never perfected a sauce for fish tacos, but I'm trying yours ASAP.

I was your exact opposite. But I secretly wished I had enough guts do wear or do any of the above mentioned things. When I was 10 I was you in high school, that person got lost somewhere along the way. YUMMY shrimpies!

Do you want to know how tall I am? 5ft. No kidding. Maybe you can give me a few inches of your height? I live dancing too, my dance classes still get in the way of my studies at uni!

Oh and, yummy prawns too :)

Those little yummy shrimps would never make it to my fajitas. I would be snagging them one by one until there wasn't any left and then we would have veggie fajitas with that yummy cilantro lime sauce. That's just how it would go in my house. It looks fantastic! yum!

oh Yum that looks so good! We have more in common than I thought, I once danced on a bar, my uncles resturant bar, in Florida, in booty shorts, to Funky Cold Madina..... lol!

and was on the dance team ( Pom's I should say)

Those fajitas are amazing! I can just about taste how wonderful they were with that sauce.

I wish I was a little bit taller... At 5 ft, I'm a shorty next to you!

You are definitely making me hungry with those shrimp fajitas. They look delicious and your stories always crack me up. I think I've been 6 feet since I was born too. The joys of being tall :)

Oh the fingertip length rule. Does that even still exist? I'm not sure where you can find appropriate length shorts if it does!

Lol!! I think you were/are normal. Or I'm weird. Either way. I still think you're pretty cool potty dance and all lol!

Awesome shrimpy tacos!!!

Love the transition from "bigger tata's" straight to the recipe. Made me laugh. Always enjoy stopping by your blog, reading your stories and drooling over the recipes.

...I am obsessed with these fajitas!

I think everyone's high school experience is quite similar to yours! Mine certainly was... except I wasn't on the dance team (not a single danceable bone in my body, think Elaine from Seinfeld - I'm THAT bad!)

Unknown said...

Great.. now I have that dang song in my head, thanks!! LOL
Love the inside look into your high school life...isn't it crazy some of the things we did?

i grew up in KY and we had the short shorts finger tip rule as well. totally sucked. what up with the south?

these look right up my alley, as long as you'll come over and de-terd the shrimp for me.

This whole thing looks yummy - but I am DROOLING over that cilantro lime sauce. I try to refrain from using the word "drool" but really I just can't this time. I'm going to pin this on my Pinterest board.

My karaoke song is 'whoop there it is.' I sorta love it;) I sing, you dance; this could be quite the entertainment.

Hmmmmm - these fajitas could not look more delicious. Wish I had one right now for lunch instead of my boring sandwich.
