BBQ Beef Sandwiches





As far as making my husband happy in this foodie world there are few things I need make him. Sure he partakes of all the pasta, vegetables, and desserts…but there is always something he longs for. Something that will make him clean the house and do all the laundry.


Guesses?


Yep, you’re right. It’s Beef.


You might have noticed I like making lists around here. It gives me focus. I am going to list out the foods that make my man swoon.

My life is not complicated with pleasing him…now I am off to go coat our steak’s in Cheeze Its.


Delightfully borrowed and made for that man of mine by SimplyRecipes (slightly altered)







INGREDIENTS

• One 2-pound chuck roast, rinsed and dried
• 2 medium onions, chopped
• 1 Tbsp olive oil
• 1 14-ounce can whole tomatoes , drained
• 1 18-ounce bottle of your favorite barbecue sauce, reserve a ¼ of it.
• black pepper
• 8 sandwich or hamburger buns







DIRECTIONS

In a large, heavy pot, heat olive oil on medium heat. Add the onions and cook until translucent, about 5 minutes. Add the tomatoes, roughly chopping them in the pot. Add the barbecue sauce, increase heat to medium high and simmer for 10 minutes. Add the chuck roast. Bring to a low simmer, cover and slow cook until meat is very tender, stirring occasionally, about 3 hours.







Remove the meat from the pot. Use a fork and knife to separate the roast into small pieces. Set aside.


Increase the heat on the pot to medium/medium-high, uncover, and reduce the liquid until thick. Stir often to prevent burning. *I chose to drain off half my liquid at this point instead of reducing.







Return the meat to the liquid in the pan. Warm both thoroughly. Add in reserved BBQ sauce. Add salt and pepper to taste.


Now hurry up and eat one because if my man finds out you’re making this…he is probably driving over right now! Honk Honk

I live with one of those, too! I think the only difference is mine prefers potato chips (and has to be Lay's Wavy Lasy, plain.)

Sadly I can identify with your hubby. Today I realized I hadn't eaten lunch at like 4:00. I got out a rotisserie turkey from the fridge intending to cut it up and add it to a nice salad. Before I knew it, I was gnawing on the leg, forgoing any greenery or accompaniment of any kind when MY hubby walked in on me...
