Baked Chicken and Rice with Black Beans





We were having one of those particular days where Indigo was well, clumsy. We spent lots of time at a water park and Indigo spent lots of time running and well, tripping. I am pretty sure her knees are reluctantly familiar with the turf at our local park…







Later that day was spent falling off things like Coffee tables, chairs, and her bed…and tripping over things like the air. Yes I said air, yes you have permission from me to laugh...


As we were walking out the door to procure some fast food (because I’m just keeping it real). As we were walking out the door my husband said to me “man, Jen today could have been one big long blooper reel!”. I agreed and out of the corner of my eye I spied Indigo going air born..then she went cement surfing with her gorgeous little face.







3 band aids, 2 bowls of cheese-its, and 1 dose of ibuprofen later I think we might be *almost* better. Nothing a little ice cream can’t cure (for both child and parent!).


And now might I present to you a nice little dish that can feed the family all week. Bake this and re-heat all week with some fresh cilantro, parlsey, and sour cream. YUM.







INGREDIENTS (serves 8)
{Printable Recipe}


10oz package of Yellow Rice mix
¾ cup Onion, Chopped
¾ cup Green Bell Pepper, Chopped
¾ cup Carrot, Chopped fine
1 TBS Olive Oil
1 small rotisserie Chicken, or 2 cups
15oz can of Black Beans, drained & rinsed
7oz can Green Chile's, undrained
1 Jalapeno, minced
2 cups Monterey Jack Cheese, shredded
½ cup sour cream







DIRECTIONS

Pre-Heat oven to 350. Butter a large 13x9 pan or two smaller baking dishes. Prepare your rice according to package directions.


Over a medium heat saute your Olive Oil, onion, bell pepper, jalapeno, and carrots in a medium skillet for about 10 minutes or until tender.







Combine cooked rice, onion mixture, chicken, black beans, chile's, ½ cup cheese, and sour cream. Spoon into your baking dishes then cover with the remaining cheese.







Bake, covered, at 350 degrees for 25 minutes; uncover and bake for 10 more minutes so the cheese is nice and melty.


What are you waiting for? Go ahead and grab a fork…just be careful not to trip

I tell you what, Indigo sounds like my kind of kid! I made something similar to this a few weeks ago, but we demolished it before it could make it to the blog. Great reminder of how perfect the casserole can be.

poor thing, we have totally been there. what's worse is that I have been there too, tripping, dropping, a clumsy mess! next time i'm going to follow your lead and get some ice cream!

Poor baby; I hope Indigo is doing fine now. I was like her myself and still probably am and the same for one of my sons, so I can sympathize with her. Your chicken dish would cure anything though, it looks great! Love those black beans and jalapeno in it!
