Ham & Cheese Quiche




Can we all agree that Breakfast for dinner is with a capital D, "D"ivine. Word.


A typical day for me goes a little something like this


450am - DING DING DING, wake up call! Race to the shower and make myself as pretty as possible.
545am - Wake the little beast and make her pretty, no effort there really. After that I toss her over some milk and a banana and off to daycare we go.
630am - Log in to my PC, 45 minutes later begin work. How slow is your work system? Geeeeeesh!
11am - Lunch
230pm - Dream of what I will be making for dinner, with a side of Indigo. :)
330pm - Off to hit the highways...and well...sit for a bit. San Diego Traffic is well, not the best.
415pm - Get the munchkin, sing all the way home. Mary had a little lamb is high on our play list.
435pm - 30 minute shred workout, while Indigo catches up on Dora & Diego.
500pm - Get dinner started (Quiche recipe to follow!!!)
545pm - Eat the Quiche...recipe is almost here
615pm - Bath time! Wooo hooo, commence to chasing toddler around
645pm - family time, lots of ohhing and awwwing over Indy going on at this time
730pm - time for bed sweet Indy
8pm - Time for all that DVR'd craptastic TV to be watched







INGREDIENTS

3/4 of a bag frozen hash browns, shredded
1/3 cup butter, melted
2 cups cooked diced ham
1 cup shredded Monterrey Jack cheese
2 eggs
1/2 cup heavy whipping cream



DIRECTIONS


Preheat oven to 425 degrees F (220 degrees C).



Squeeze any excess moisture from the potatoes and combine them with the melted butter or margarine in a small bowl. Press this mixture into the bottom and sides of an ungreased pie pan.







Bake at 425 degrees F (220 degrees C) for 25-35 minutes, edges should be brown.







Remove pan from oven and arrange the ham and cheese evenly over the potatoes. In a separate small bowl, beat together the eggs and the cream. Pour this over the ham and cheese.







Return pan to oven and bake for 425 degrees F (220 degrees C) for 30 minutes, or until the custard has completely set.



AND LET'S GIVE A SHOUT OUT TO BREAKFAST FOR DINNER YA'LL, BECAUSE WHEN 3 PEOPLE CAN PUT DOWN A WHOLE QUICHE...ONE OF THOSE PEEPS ONLY BEING 3FT TALL...WELL THEN YOU KNOW YOU HAVE A GREAT MEAL.

Your morning starts so early...the joys of having children! But what a great way to begin your day...I would love waking up and getting to snuggle with your sweet girl! I love quiche and could easily eat it for breakfast, lunch and dinner!

I LOVE quiche! And your hash brown crust recipe sounds interesting. Sure beats having to make pastry and rolling it out and messing up the whole counter. I'm gonna try it this weekend :)

Wow, 545am and she's off to daycare???
The sky is only bright here at 7 plus and it's totally dark here at 5am.

BTW, the quiche looks great,and I'm going to try this out the next time I have a pack of cream.

Jennyfurla...this reminds me to get my quiches back into the oven. There was a time where I used to make one at least once a week...then I dwindled a lot. I don't know why I had stopped making them?
Monterrey Jack cheese sounds very appealing for my next try ;o)

Hi all, I know 450 is crazy early. I am in bed by 9pm on a *school* night. I might make it to 1030 or so on the weekends when I sleep in till 7am. HA

Dang, I'm ired just reading about your schedule! I'm so not a morning person so we have breakfast for dinner wuite a bit. After all it is my favorite meal!

I am so making this quiche and I love that it has a potato crust, rather than pastry. yum!

i made this for a brunch over the weekend and it was a big hit! the hash brown crust was *amazing* with this. i made a few changes and was pleased with the results - bacon instead of ham and small chunks of monterey jack cheese instead of shredded (turns into little gooey cheese chunks once it's cooked). i'll definitely make this again :-)
