Lemon Strawberry Muffins



I think I might be a little strawberry crazy, or at least I bought so many strawberries that I need to utilize them quick like. This is a fantastic muffin recipe. As far as consistency and my opinion I think they hit the mark. There is also just the right amount of strawberry, and now that I think of it a really nice brunch idea (if you want to do a little brunch party with friends) would be a muffin bar with various fruited muffins and different flavors of butter. You could even make mini-muffins, oh listen to me dream.

INGREDIENTS

2 ½ cups of flour
¾ cup white sugar
2 tsp of baking powder
¼ tsp baking soda
¼ tsp salt
Zest and Juice of 1 Lemon (medium)
1 large egg, beaten
¾ cup buttermilk
*****alternative to buttermilk is 1 tbs of white vinegar and then the ¾ cup while milk (what I used)
2/3 cup vegetable oil
1 tsp vanilla extract
2 cups of chopped fresh strawberries

DIRECTIONS

Preheat your money maker to 375. No wasting time here, you might also want to spray down your muffin pan and another suggestion is to cut parchment paper into little circles and then line your pan so the muffins NEVER stick.

In a bowl whisk together your egg, buttermilk, oil, lemon juice and vanilla extract.

In another and larger bowl combine the flour, sugar, baking power, baking soda, salt & lemon zest. Next you want to gently fold in the berries. Now the next step is important according to ALL of my internet research which was several several minutes. You want to with a rubber spatula gently incorporate the wet and dry ingredients; the minute they are mixed you need to STOP! It is a cardinal sin to over mix muffins, so you have sorta been warned.



I filled my very large muffin pan to the top, these muffins blossom well. I made 9 large muffins with the above list. There don’t happen to be any left now though. So, bake your muffins until your muffin tester, aka toothpick or something similiar comes out clean.

Enjoy, I know I am going to have a mini muffin bar for any future brunch I host.
