Strawberries Stuffed with Cheesecake




Happy Thursday, almost the weekend…can you smell it? I sure can – for some reason it always feels like it is Monday to me so when I stop to take in the coming weekend it just makes me feel all nice.


I know all ya’ll berry lovers out there have already given in, and somewhere in your fridge or freezer you have some of those beautiful red strawberries waiting to live out their special strawberry dream…I got one for you – quick, easy & scrumptious.


INGREDIENTS


1-2 Packages of Strawberries (depending on your stuffing)
1 8oz package of Cream Cheese
1 1/4 tsp of Vanilla Extract (add more depending on your taste)
¾ cup Powdered Sugar
6-8 Graham Crackers, lightly crushed


DIRECTIONS


Wash your berries and then dry. When ready hold the berry and cut a thin piece off of the side.






Next take a small spoon and remove the white inside portion of the strawberry, leave a nice void in the center in order to fill with our cream cheese mixture.







Now for the cream cheese filling. Mix together the cream cheese, powdered sugar, and vanilla extract. This can be made ahead of time if needed. Once ready take a spoon and fill each strawberry with the mixture.







Now take your crushed grahams and place them on a plate, take each strawberry and *smoosh* it down into the crumbs – cream cheese side down.







Now after you quit drooling, pony up and take a bite! After I made these berries I kept them chilling in my fridge until served. Remember to have a great weekend with the ones you LOVE….including these strawberries.

Niiiice. We love these. I usually make mine with mascarpone and I might get lazy once in a while and just top the "cheesecake" mixture with my fresh strawberries. Hee-hee

Hi Jennifer! I just saw these over at 'The Ungourmet'. Kim made them sound so good. I'm on a no refined sugar diet, but I think this recipe could easily be made with something like maple, no? I bet I could (smile).
